Khamsai Co., Ltd. runs the restaurant under the name “Comedara” which is managed by Ms. Pimprapai Wongthada or Khun Noi since 2005. It is widely well-known among international clients for its tasty recipes, atmosphere and good services by well-trained staffs, which has been entrusted by many organizations, and both governmental offices and private companies, such as UNESCO, Electricity Department, including groups of tourist, who have been organizing their parties at “Comedara”.
The recipes of “Comedara” was originally taken from Khun Noi’s mother as a heritage with variety of more than 50 items. Nowadays, “Comedara” has created a list of more than 170 items; Northern-style food, Thai-style food, vegetarian food and single dishes, such as “Hinley Curry”, “Ei liang Duck”, Roasted Vegetables, Mushroom Gravy, Baked Rice with Seafood in Claypot, Curry-fried Shrimp, Tom Yam Kung in Young Coconut, etc.
Grandmother Khamsai Wongthada, with age of 84 years. She is the owner of the authentic recipe of unique Hinley Curry. She was born in Chiang Mai who has learned cooking from her mother. Later, having taken another recipe of Hinley Curry from Mae Hong Son province to combine with her mother’s one until getting of her own of 3 favors of it; by mixing streaky pork, red-meat pork and young spare ribs pork together with spices, Hinley curry, sugarcane and other seasonings, until it is absorbed into the meat. Then, put it on fire until it is well cooked.
“Comedara”is the name of a beautiful flower in a bush form with silver leaves and yellow bosom. It is from the family of Acacia which Princess Dara Rasmi had taken from Australia to have it planted in the North of Thailand
“Comedara”returned benefits to community by sharing some area of the restaurant for exhibitions of conservative art and culture by sharing information on old city history which is considered as a spirit of life of local people through promoting souvenirs to customers.
A part of business benefits went to supporting of some schools, some governmental or organizations.
“Comedara”cares of customers’ health by using Sodium Bicarbonate to wash vegetables, including choosing non-pesticide vegetables in cooking. And it helps to reduce using chemical stuff to preserve nature by using EM process, producing dish-washing liquid, bathroom- washing liquid and mosquito-repellent from natural resources.
